One of the standout recipes that never fails to impress is Chocolate Salame. This delightful dessert, inspired by Nigella Lawson's recipe from NIGELLISIMA, is not only a feast for the eyes but also a deliciously rich treat that’s perfect for sharing with family or gifting to friends.

 

Why Chocolate Salame?

 

Chocolate Salame is a unique dessert that combines the indulgence of chocolate with the crunch of nuts and cookies. Its rustic appearance and delightful flavors make it a conversation starter at any holiday gathering. Plus, it’s incredibly easy to make, requiring no baking—just a bit of patience while it sets in the fridge.

 

Ingredients

 

This recipe yields approximately 20 generous slices, making it perfect for sharing. Here’s what you’ll need:

 


 
  • 9 ounces good-quality bittersweet chocolate (minimum 70% cocoa solids), roughly chopped

  • 9 ounces amaretti cookies (crunchy, not soft)

  • 7 tablespoons soft unsalted butter

  • ¾ cup superfine sugar

  • 3 large eggs

  • 2 tablespoons Amaretto liqueur

  • 2 tablespoons unsweetened cocoa powder

  • ½ cup raw almonds (unskinned), roughly chopped

  • ½ cup hazelnuts, roughly chopped

  • ⅓ cup pistachios, roughly chopped

  • 2 tablespoons confectioners' sugar (for decoration)

 

Method

 

1. Melt the Chocolate: In the microwave or using a heatproof bowl over simmering water, melt the chocolate until smooth. Once melted, set it aside to cool in a non-fridge area.

 

2. Prepare the Cookies: Place the amaretti cookies in a large freezer bag, seal it, and bash them with a rolling pin until you have a mix of rubble—not dust.

 

3. Cream the Butter and Sugar: In a large bowl or a freestanding mixer, cream the butter and sugar together until soft and light.

 

4. Add the Eggs: Gradually beat in the eggs one at a time. Don’t worry if the mixture looks curdled; it will come together once the chocolate is added.

 

5. Combine Ingredients: Stir the cooled melted chocolate into the egg mixture, followed by the Amaretto liqueur. Sift the cocoa powder into the mixture and stir until combined. Finally, fold in the chopped nuts and crushed cookies until everything is well coated in chocolate.

 

6. Chill the Mixture: Transfer the mixture to the fridge for about 20-30 minutes to firm up slightly.

 

7. Shape the Salame: Lay out two large pieces of clingfilm, overlapping them. Spoon the chocolate mixture onto the center and shape it into a log, about 30 cm long. Roll it tightly in the clingfilm, twisting the ends to secure it. Refrigerate for at least 6 hours, preferably overnight.

 

8. Decorate: Once set, remove the clingfilm and dust the salame with confectioners' sugar to prevent stickiness and enhance its appearance.

 

9. String It Up: Use a piece of string to tie the salame, creating loops around it for an authentic look.

 

10. Serve: Place the salame on a wooden board, slice it, and fan out the pieces. It’s best served cold or just slightly chilled.

 

Additional Information

 

Make Ahead: You can prepare Chocolate Salame in advance. Wrap it in clingfilm and tie it with string just before serving. It can be stored in the refrigerator for up to 4 days or frozen for up to a month. Just remember to thaw it overnight in the fridge before serving.
